Tequila

Tequila is typically produced by steaming the agave inside industrial ovens before being distilled two or three times in copper pots. Our tequilas have been hand-picked to ensure the highest quality and are intended to be sipped. All tequilas are served with a side of sangrita. Our tequila selection is always evolving so be sure to ask your server!

Blanco

known as “silver” or “plata” tequila. This tequila is unaged, typically bottled and packaged directly after being distilled. This tequila is in its purest form and features the truest flavors of the blue agave plant since it isn’t aged in barrels.

This ultra-aged liquor has only been recognized since 2006. The extra añejo has the same exact distilling and aging process as añejo tequila except that it is aged longer. This tequila is classified as one that is aged for more than three years. The ultra-aged tequila is darker in color than añejo with a dark mahogany shade. Because of the lengthy aging process extra añejo is the most expensive, but it will be the smoothest tequila.

mezca.jpg

Mezcal

Agave is cooked inside earthen pits that are lined with lava rocks and filled with wood and charcoal before being distilled in clay pots. All mezcals are served by Sal de Gusano/ Sal de Chapulín and an orange wedge.

Mezcal gets its smoky flavor during the production process. The hearts of the agave plants, piñas, are cooked in pits in the ground in a style that's similar to that for making barbacoa. (Tequila agaves, by contrast, aren't cooked.) The cooked agave is then crushed, combined with water, and allowed to ferment.
